Job Description
• Prepare a variety of sushi dishes including nigiri, sashimi, maki rolls, specialty rolls, and other traditional Japanese cuisines.
• Select and prepare raw fish and seafood, ensuring proper handling, cutting techniques, and food safety standards
• Prepare sushi rice following traditional preparation methods and seasoning standards.
• Maintain high standards for presentation, portion control, and freshness of ingredients
• Develop and prepare specialty sushi menu items and seasonal offerings
• Ensure compliance with food safety, sanitation, and kitchen hygiene regulations.
• Maintain inventory and records of fish, seafood, and sushi ingredients and report shortages.
• Oversee or manage kitchen operations
• Train and supervise kitchen staff and helpers
• Maintain a clean and organized sushi preparation station Qualification
Requirements
• At least Secondary Education, or with culinary certificate or diploma
• At least 2-3 years’ work experience preparing sushi in a commercial kitchen
• Experience in handling and preparing raw fish and seafood for sushi and sashimi
• Knowledge of Japanese cuisine techniques and sushi preparation methods
• Good oral communication. Must be able to speak and understand English.
• Ability to work in a fast-paced environment
• A positive and team-oriented attitude
• Must be dependable and organized

Job Description
• Establish work schedules
• Establish methods to meet work schedules
• Supervision of 5-10 people
• Supervise and co-ordinate activities of staff who prepare and portion food
• Train staff in job duties, sanitation and safety procedures
• Estimate ingredient and supplies required for meal preparation
• Ensure that food and service meet quality control standards
• Address customers' complaints or concerns
• Maintain records of stock, repairs, sales and wastage
• Prepare and submit reports
Qualification Requirements
